Even if you are not using headphones with control buttons on the cord, the shuffle may be getting false signals (in this case to stop playback).
First, make sure the headphones plug if fully inserted into he shuffle's headphones jack. It should "click" into place. If the connection points on the plug are not properly aligned, you may still get audio, but it can cause a false signal. If that does not help, try a difference set of headphones, as a test to see if the problem goes away.

I used the beats 2 - 3 workouts with no problem, Now, I've experienced the stoppage as described above. I'll go back to my ipod ear plugs and see if that fixes it.
Could it be my shuffle is not a most recent version?
Again, I appreciate your help.

Apple mainly changed the colors choices, and updated software requirements for the Mac or Windows PC running iTunes. So any headphones that are supposed to work with 4th gen iPod shuffle should work.
It may not be the headphones. That's a guess. If you got some moisture (like sweat) in the seams of the shuffle's control buttons, there could be a short circuit there that is causing the issue. However, if the problem goes away when you try the other headphones, then the cause is probably related to the Beats.
