Or you can this from the command line:
For Yosemite you can create a bootable installer from a Terminal Session

sudo /Applications/Install\ OS\ X\ Yosemite.app/Contents/Resources/createinstallmedia --volume /Volumes/Untitled --applicationpath /Applications/Install\ OS\ X\ Yosemite.app
sudo /Applications/Install\ OS\ X\ El\ Capitan.app/Contents/Resources/createinstallmedia --volume Volumes/Untitled --applicationpath /Applications/Install\ OS\ X\ El\ Capitan.app --nointeraction
Then boot the external installer disk and install Yosemite
