Operating ambient temperature: 32° to 95° F (0° to 35° C)
Nonoperating temperature: -4° to 113° F (-20° to 45° C)

I have a iPhone-6s. This issue happened to me aswell when i went skiing. I was at like 40% then i used it for a minute and the phone shut off. I believe this is the phone software trying to protect the phones battery. According to http://www.apple.com/ca/batteries/maximizing-performance/, if its < 0 degrees we are in an unsafe battery operating range. What i did was I brought my charger in the car and charged it up for like 3 minutes and the phone came back online.
So to summarize I believe this is normal behavior. -

I've got the same problem with my iphone 6S.
It even happens when it's not that cold. it happens when it's even between 5 and 10°C.
i don't know what to do about it either...

If you think it is faulty contact Apple or the place you purchased it. An Applestore should help if you have one near you, otherwise you'll need to contact support or try Tweeting Apple support…

There is no point delaying if you have warranty, just back it up before you visit a store so they can reset or replace it that is appropriate.
