I just upped my iPad Air to IOS8 two nights ago and ran into the same problem: the Apple TV apparently disappeared from the airplay menu. Discovered accidentally I could scroll down in the little window and find it. So apparently this bug *still* has not been fixed.

Was having same problem. Go to settings,general, software update. Fixed the problem for me
