If that doesn’t work, use Apple’s iForgot service, or contact their Account Security team, or if you’re the iPad’s original owner, take it and its purchase receipt to a physical Apple Store or otherwise contact Apple.

It doesn't matter if an email was canceled, it's still your user ID. And you would have needed the password to deactivate iCloud, anyway. So just use the password that you created for the deactivated email address; it doesn't have to have been the same as the your email password (if fact, it shouldn't be). If you have forgotten the password visit https://iforgot.apple.com.
