Q: Can't complete update of ipad due to old OS

I just updated my ipad and when prompted to activate it, this is the message:

     "Your iPad could not be activated because the activation server is temporarily unavailable. Try connecting your iPad to iTunes to activate it, or try again in a      couple of minutes."

 

I tried connecting to iTunes on my MB and the error says that I need a newer version of iTunes, even though I have the most up to date (for my OS). That's when I realized the OS only allows an older iTunes version.

 

So here is my question: Now that I have started the update process and am stuck is there any way to circumvent the process and activate using the old iTunes?  if not, how can I reverse the process and just go back to the previous (pre-update) iPad version?
