If you sign out of iCloud your iCloud data is not deleted. You also will be offered to retain the iCloud data already on your device or to delete the iCloud data on the device

If you want to sign out of iCloud because you want to stop using it altogether, or start using an alternative, you can do the steps in this article to create local back-ups of your iCloud data: Archive or make copies of your iCloud data - Apple Support

I Don't want to sign out of icloud but apparently I have to, to stop it updating is this correct?

I pressed sign out but then it said that documents and data hadn't been uploaded and I would lose this data on iPad?

If you sign out and the data on the device is deleted and you sign in again the iCloud data will be redownloaded

What about this thing about photos older than 30 days will be deleted? I Dont really understand it. I have no photos in photo stream on icloud but loads in different albums there. Under albums I have albums and photos in all photos will these not be deleted either? Many thanks. Sorry I'm so thick about this!!!

The 30 days only applies to PhotoStream photos since those photos are only retained in iCloud for 30 days and thus they (older than 30 days) can't redownloaded when yo sing bac into the iCloud account
