If you're looking to restrict access to certain apps on iPads that students are using, you might consider using the Restrictions feature in iOS. Restrictions can be accessed and configured via Settings > General > Restrictions, can be set to restrict specific apps, and cannot be modified without the Restrictions passcode that's set on the device.
Use Restrictions on your iPhone, iPad, and iPod touch

Apr 14, 2016 7:10 AM in response to MissE35by DavidOpdyke,If your school has any IT staff available, they can also supervise those iPads and restrict the kids from being able to add other applications to them. This is more drastic than the suggestion above, but good if you need additional control.

Apr 16, 2016 5:30 PM in response to MissE35by Macology,Hello ma'am,
Apple has a software solution that grants you the tools you need for the task in question. The name of the software is Classroom, and it is available for free in the App Store. Classroom offers a robust feature set for classroom management as it relates to the use of iPads. I recommend that you speak with the IT for your school site about deploying this software on your campus. Below, I have provided the list of features as well as a link to download the app from the App Store. Best of luck.
