The short answer is no. But you can create categories for Auto- Gas, etc.
The first step would be to add your new categories to the Summary by Categories table in the budget tab.
Second step edit the popups on the transactions table. It is vital that the popups and the categories in the sumary table are spelled the same. A stray space would break the link.
Delete "Auto" from the popup and Summary by Categories table.

I have been doing that, but was wondering if you could subcategorize / under categorize each category in another column? So as not having to scroll down a long popup... I don't know if you follow my train of thought? maybe it is just another step not needed?
With these subcategories i'd like to make more charts that when i categorize them in subcategories i get automatic like in the budget template.

I was attempting to emulate dynamic popups something that would offer different possibilities depending on what was initially chosen in a popup. This sounds a little like what you are asking for. Ian created a user tip:
Nested (or Cascading) Pop-Up Menus in Numbers 3
I think it might be usable in an order form but it uses many rows for each displayed row and would become unwieldy in a long record.
