To rule out a faulty USB docking cable, try a different one OR confirm the one you have works with another device (if possible).

If the cable is not the problem, watch the iPod's screen when you connect it.  Does it initially say "Connected" or "Do not disconnect" or show other indication of a connection to the Mac?  Or does it only show the battery charging symbol?  Or does it no react at all to being connected?

That's good.  That means there's a data connection between the iPod and Mac.  So the issue is that iTunes does not see it.

As a test, shut down (power off) the MacBook and disconnect all USB devices.  Connect the MacBook's power adapter, so that it's not running on battery power.  Do this to Reset (restart) the iPod

Learn how to reset your iPod - Apple Support  (see section iPod with a click wheel)

Start up MacBook, run iTunes, and connect iPod to a direct USB port on MacBook, by itself.  Is there any difference?  If no difference, repeat the same steps, but put the iPod into Disk Mode before connecting it

If iTunes picks it up, it may prompt you to do a Restore on the iPod.  If you're OK with erasing the iPod, do the Restore.  If the problem was only data corruption on the iPod, the problem should be resolved after the Restore.
