You may find that you need to unpair your headset from your iPhone (or any other device that it may already be paired with) before you can pair it with your watch. If it is already paired with your iPhone, for example:
- On your iPhone go to: Settings > Bluetooth.
- Find the earphones in the list, then tap on Forget this Device.
Then, to pair your headset with your Apple Watch:
- Put your headset into discovery / pairing mode (follow the manufacturer's instructions).
- On your watch, go to the Home screen (single press on the Digital Crown), then tap on Settings (the cog icon) > Bluetooth.
- Your watch will now search for Bluetooth accessories that are in discovery / pairing mode.
- Choose your headset when it is shown.
- If prompted, enter a passkey or PIN.
