Q: How do we get rid of all of these unauthorized charges??
How do we get rid of all of these unauthorized charges on our I-tunes account which have shown up on our credit card statement...unbeknownst to us??

They are 'proper' charges, or only temporary store holding charges (which your card issuer should automatically remove : About payment card authorization holds in the iTunes Store - Apple Support ) ? If 'proper' charges, and if you haven't already done so, change your account's password and contact iTunes Support : https://www.apple.com/emea/support/itunes/contact.html
