The disc icon for the external drive should be on the Desktop when the drive is connected to your Mac.

If it's not, go to Finder > Preferences then select the General tab then make sure:  External Disks is selected.

You can drag photos and video files directly to that icon.

Or you may want to use Time Machine >   Use Time Machine to back up or restore your Mac - Apple Support

The Time Machine app is located in your Applications folder.

Are the photos and videos still on your iPhone?

Then connect the iPhone to a USB port and launch the Image Capture application on your Mac.

Image Capture lets you transfer the photos from the iPhone to a folder. select the external drive as the destination for the import.

Is there a way to set a folder location on the external drive as the default location for Photos whenever I upload from my iPhone?  The external drive is, of course, connected to the Mac mini in which Photos currently defaults.

    Thanks!

the only location is the Photos library - it can be on an EHD that is formatted Mac OS extended (journaled)
