If that happens again, ask them to run through the process again.

The only time when a PIN may properly be required when paying via Apple Pay is in Australia, where it may be required for purchases over $100.
In the US, when paying with Apple Pay in stores, you may need to sign a receipt (depending on the store and transaction amount).
Note that, if you are prompted by a payment terminal to choose Credit or Debit, Apple advises that you should always choose Credit (including when using a debit card via Apple Pay).
