I understand that you are trying to restore from a backup that you made. The question would be is if you used Time Machine to back up? If you did, then you should see that to restore that information. Now if you did not back up your data with Time Machine and you just simply dragged and dropped the information, then you would need to create a new user and copy that information back over.

I did use Time Machine, but in Recovery Mode the Disk Utility couldn't find a back-up. I tried to restore the "broken" drive from an USB drive, with no luck. The drive had the Mac HD folder on it, so I imagined it would swap it with the "broken" drive and replace it. Now it doesn't recognize any start-up disks at all. Is it possible to copy the back-up onto an USB HDD and try it from there?

You should see the drive show up in Disk Utility but that is not where you restore from. You should have an option to “Restore from a Time Machine Backup” and then follow the prompts.
If that does not work, I would reinstalling OS X and the setup the computer as new. Then I would use Migration Assistant to restore from the Time Machine backup.
