Listen to voicemail. If a caller leaves voicemail, you get a notification—tap the Play button in the notification to listen. To listen to voicemail later, open the Phone app then tap Voicemail.

This is not relevant.
(As your question explains, your issue is with leaving voicemail messages for others, not listening to your own voicemail messages on Apple Watch).

I've sent the suggestion to Apple that they try to create a method for allowing the watch user to press something that has the equivalent effect of pressing a hash key during a phone call from the watch.
