Follow these steps:
- Connect your watch to its charging cable - with power connected.
- Press and hold the side button until you see the Power Off slider.
- Press firmly (ie more firmly than usual) on Power Off and then tap on Erase all content and settings.
Then re-pair your watch using the Watch app on your iPhone, choosing to restore from backup when offered the option.

The link provided by Carolyn just repeats the same solution - along with other steps that are not relevant to your issue (as your iPhone believes that the watch is unpaired, but your watch has not yet been erased).
