Keeping your Apple Watch software up to date can help to avoid problems when backing up data.
On your iPhone tap Watch app icon
then tap General > Software UpdateLatest version available is 2.2.1.

Actually the same goes for you iPhone.
Tap Settings > General > Software Update
Latest iPhone version available is 9.3.2.
