    If you mean the From: address when you are composing, you would delete it in Mail -> Preferences -> Accounts.

    I am talking about the auto fill-in of an email address.  When you type the first letter and the drop box appears for a choice of addresses to use.  I want to delete some of those addresses.  They are not in my contacts and they do not show up in recent recipients.

    The dropdown is constructed from 'previous recipients', which you can see listed:

     

         Mail > Window > Previous Recipients

     

    and delete the one that is annoying you.

    The email address I most wish to eliminate is not listed in the previous recipients list.  Even when I type in a "search" for it, and yet, it shows up in the drop-down "To" box.

    If you have an iOS device, type the address there. In the autofill list, look for the address. It will have a circle-i icon to the right side of the address. Click on the icon and choose Remove From Recents.

    the only thing that shows up next to the "To" row next to the email address I wish to delete is an arrow pointing down.  When I right click on it and press Remove, it only removes it for that new message.  It pops up again when creating another new message.  Its Mail on Mac OS X El Capitan

    I assume your reply was checking on an iOS device. Recents sync between computers and iOS devices, although they will not all sync to the Previous Recipient list in Mail. They will show in the address fields though.

     

    What mail provider are you using? If you are you using Microsoft?

    Another question is whether or not this is an old email address you may have used in the past? You may have a left over SMTP server that you may need to delete.
