Thanks for reaching out on the Apple Communities. I'd definitely want to have my Apple Music in the correct language so I'd know what I'm listening to. You would first want to try restarting your device and force closing the Music app. If those do not resolve the issue, you can try a few resets. If you do not already have a backup, please make a backup of all your data in iTunes or iCloud.
Then, we want to Reset All Settings.
Reset All Settings: Tap Settings > General > Reset > Reset All Settings. This will reset all settings including Wi-Fi networks and passwords, cellular settings, VPN and APN settings that you’ve used before, Touch ID and a passcode, any cards setup in Apple Pay, and removes restrictions. This will not delete any personal data such as music or pictures.
If the issue still has not resolved, you could try restoring from your backup that was done prior to you changing the language to French initially.
Lastly, you can erase all content and settings on your device, and set it up new. Be aware, this option will remove everything, including music and pictures, and set the device up as if it was brand new.
