Progress towards the daily Stand goal is monitored across 24 hour periods. If you were wearing your watch beyond midnight, you may have earned one or more hours of Stand credit for the "next" day before you went to bed.
If you wore your watch whilst sleeping, your arm movements (monitored by the accelerometer) may also have triggered this.
I'm afraid that no-one here can tell you why Apple did not include a built-in sleep tracking app (this is a user-based technical support community).
