Thanks for checking out the Apple Support Communities and for the details on what's happening with Touch ID. I understand you're concerned about being able to unlock your mom's iPhone with your fingerprint. I can certainly understand wanting to make sure that her Touch ID is functioning properly to ensure her iPhone is secure.
If you helped her set up her iPhone, or set up her passcode, it's possible one of your fingerprints accidentally became registered on the device. I've had this happen when setting up an iPhone for someone else. I suggest going to her Touch ID settings (Settings > Touch ID & Passcode) and placing your finger on the Home button to see if any of the fingerprints listed on the page become highlighted. This will let you know if your fingerprint is set up on her iPhone.
If you don't see any of the fingerprints become highlighted when you place your finger on the Home button, I recommend deleting all of the currently registered fingerprints and then setting them up again making sure only to register her fingerprints. Then test it out again.
Here are a few helpful tips on managing the Touch ID settings on your mom's iPhone:
Tap a fingerprint to rename it.
Swipe to delete a fingerprint.
Identify a fingerprint in the list by touching the Home button.
