See how difficult it is to get the merchants to accept chip reading cards. I don't know the details of Apple Pay such as how much Apple takes off the top but merchants may not see any advantage in it to make it worth the learning curve. My only experience with Apple Pay was when I had to stand in line behind a woman for 4 minutes while she and the assistant tried to figure out how to use her iPhone to pay for a candybar. I was that close to just putting down a dollar bill and buying it for her.

Under the Feedback Type drop-down, one of the options is "Wish this business accepted Apple Pay," which sounds ideal for your situation. That said, I don't know exactly what Apple would do with that feedback, but if you really want to try everything you can do on your end, then this is probably a good option.
