I know how important it is to be sure Quicktime is recording the screen correctly as well.
Without knowing what steps you've tried so far to troubleshoot. I would suggest trying a different cable and trying to record with a different iOS device and see if the results are the same. Also, be sure you computer OS is up to date.

Thanks for the reply.
I have tried both changing iOS device and cable, with results coming out the same. My Macbook Pro is currently on OS X Yosemite 10.10.1, which I believe is up to date? (Unless I have missed an update!)

If you are running 10.10.1, go ahead and go to the App Store on the MacBook and check for updates. The latest version of Yosemite is 10.10.5. That might get the issue resolved also if there is an update for QuickTime as well.
