Are you talking about the passcode used to get into the device?
If you know the current one

Settings - Passcode - enter current passcode - choose another one

If you do not know / have forgotten the current passcode

If you forgot the passcode for your iPhone, iPad, or iPod touch, or your device is disabled - Apple Support
