Did you restore the classic back to a factory settings and then select which content should sync to it again and sync? See the break up large transfers method in Corrupt iPod Classic and start by syncing just a few albums and make sure the artwork shows properly before loading up more.
It is some time since I routinely worked with classics but it is possible that where art isn't consistently embedded in each track of an album you may get different results on the classic from those shown in iTunes.
