There is no way of upgrading to iOS 8 unless you are jailbroken which I truly hope you are not. Check under Settings, you should be on 9.3.2 if you upgraded recently. If so reset your mail account as follows.
First close your Mail App completely from the app switcher window by double clicking the Home button and swiping up the Mail preview pane up until it disappears from the screen. Then go to Settings > Mail, Contacts, Calendars > locate your email provider and click on the account and swipe to Delete. Then do a forced restart. Hold down the Home and Wake/Sleep buttons at the same time for about 15-20 seconds until the Apple logo appears. Then go back to Settings > Mail… and add the account again.

Just as an aside. I had a weird experience a couple of months back when I updated my iPad 3 that had sat unused for more than a year. I believe it was still running a late version of iOS 6. It updated to a version of iOS 8. I've seen it come up once or twice in the forums. I don't know how it could have happened. I suspect that if it hadn't happened to me, I wouldn't believe that it could.
And, no, the iPad was never jailbroken.

Jul 8, 2016 12:03 PM in response to Meg St._Clairby KiltedTim,The only way I can think of that that might even be possible would be if the device had downloaded but not yet installed iOS 8 back when it was current, then got turned off and not powered on again until now, at which point the update installed... I'm not sure that could happen without user intervention to approve the install, though.

I have a distinct (thought not necessarily 100% reliable) memory of downloading the update at that time, thinking it was going to update to iOS 9.whatever. But, I could be misremembering and what you say could be possible. I am more than willing to accept some sort of user error as an explanation.
