Q: If I  respond  to  an email  by  telephoning  the  sender I  want  to  add  a note  to the  message to  record  how  I respond/dealt  with  the message. I  use  to  be able to  do  this -  can I  do  it   on  my  Mac?

Can I  add  a note  to an  email  message to  record  how I  dealt  with  it?

    I don't think you can add notes directly to messages in the current version.

    Although not nearly as flexible, an alternative is to use "flags". Alas I don't think one can rename them or create custom ones, but if you have a small number of situations you can come up with a personal code for them (e.g. green for dealt with, yellow for waiting, etc.)

     

    There are several Extensions available for Apple Mail, it is possible that some of them have this functionality.
