I see that you are having an issue with opening applications and files in Finder with a double and single touch, or from the keyboard by pressing enter. I know how important it is to be able to browse and open files how you want on your Mac. I'll be more than happy to assist you with this.
First, I would like you to try this in safe mode. Safe mode (sometimes called safe boot) is a way to start up your Mac so that it performs certain checks, and prevents some software from automatically loading or opening. This can isolate any software that is running in the background that may be causing this issue. Please use the article below for help starting into safe mode:

If you notice the same issue in safe mode, I would like you to test in a new user account. Testing in a new user can help diagnose whether the issue is just isolated to your main user account. The resource below will assist in creating a new test user account:

Make sure that when testing in safe mode, and a new user account, that you test by opening the apps and files the same way. See if you get the same result, and have to use the option button.
