I'm no expert with FCPX but from what i can tell, I can set higher resolutions but i can't output at more than 4k. That seems to be the largest output available in the dialogue.
Am i missing something ? Your advice is appreciated ...

It sure does. There is no limitation, at least in theory.
File->New Project.... there is a 5K option right there, but you can choose custom and enter any size you want.
Note that some codecs, however, do not support unlimited sizes. H264, for example, only supports up to 4K.
You may have to export as one of the ProRes flavors, which means two things: huge files, and limited potential audience.

Is there any clever answer to keeping file sizes down ? What is Pro Res Proxy ? It seems quite a bit smaller but still massive. Files are gigabytes not just megabytes.

Proxy is a low resolution video used for editing not for output.
Compressor doesn't support h.264 8k encoding.
HandBrake and Adobe Media Encoder supports encoding 8k h.264. The HandBrake encoding won't play in Quicktime but it will play in the VLC player. I read where Youtube supports 16k... not confirmed. Can't wait for Youtube to support h.265.
8k is breathtaking on YouTube, makes 4k look like 720p. Apple is dragging it's feet when others are marching forward.
Even 8k downconverter to 4k looks better than 4k.
My Safari for some reason won't play the 8k videos on YouTube, error. Google Chrome will play them.
