Thank you for using Apple Support Communities. It's my understanding your iPhone has been freezing when texting. I know it's very important to be able to message without having to restart your phone. I am happy to help get this resolved with you.
You've done a great job so far trying to fix this. Freezing and behavior issues can occur when the storage is almost full. Please use the link below to check your storage from the iPhone and in iTunes on a Mac or PC:
Check your storage on your iPhone, iPad, and iPod touch
If the issue persists I recommend backing up and restoring through iTunes. This will allow iTunes to remove the current software and content and install a fresh copy, resolving software issues. Follow the steps in the following link to assist with backing up and restoring:
Use iTunes on your Mac or PC to restore your iPhone, iPad, or iPod to factory settings
If you continue to have issues, the issue could be caused by your content. In this case you'll need to erase the phone and set up as new. Here is some additional information on how to do so:
How to erase your iOS device and then set it up as a new device or restore it from backups
Have a wonderful day!
