You can't change and/or view your rescue email address if you can't remember your answers, you will have to contact Support in the country where you are (and which is therefore the country on your account) to get the questions reset - use the instructions towards the bottom of this page : If you forgot the answers to your Apple ID security questions - Apple Support

I know my security questions, answered them but the rescue email is still greyed out and I can't change it - the rescue email doesn't exist anymore and I need to change it!  HELP!

You can't change it if you don't know your answers, you will have to contact Support in your country to get them reset - go to the bottom of the link at the end of of my above reply
