Q: iphone says I left the conversation but I didn't

Thanks for reaching out to the Apple Support Communities! It sounds like you are needing help with being removed from a group conversation, I know how important it is to know how you can be removed from a group. Check out this article about how to Send a group message on your iPhone, iPad, or iPod touch. Specifically:
Add or remove someone from a group conversation
Anyone in a group iMessage can add or remove someone from the conversation. You can remove a person from a group iMessage that has at least three other people.
Remove a person
- Tap the group conversation that has the contact you want to remove.
- Tap Details, then swipe left over the name of the person you want to remove.
- Tap Delete.

For example, if I am deleted do I and the others see that I've been deleted/removed from the conversation, do we see the message that I've left the conversation, or do I see that I've left the conversation and the others see that I've been removed?
And since I did not manually leave the conversation, but I see the message that I left the conversation do I assume that someone removed me from the group text? Can I discover who removed/deleted me from the text?

Great questions! To answers your questions, everyone in the conversation who is going to see the message that you have been removed or left, but it only says you left. However, it does not show you who removes someone from the conversation and anyone in the group conversation is allowed to add or remove someone. So in your case, you would see the message you "left".
As for leaving the conversation, when you are in the message and go to the little letter i with the circle around it, you can see the members who are still in the conversation as well as other options in the message such as Do Not Disturb and Leave the Conversation.
