Welcome to the Apple Support Communities! Keeping contacts in sync across all of our devices is certainly a must. It sounds like your contacts were synced with your Gmail account. You are correct. Because that account is still listed on the iPhone, turning off contacts or removing that account from the phone would only produce one option. That is "Delete from my iPhone". Moving forward, there are a few things that can protect these crucial bits of information.
First, you can manually record contacts in a notebook so they can be re-entered at a later date. You may also email each contact individually to yourself, which can also be a time intensive process.
As a tip, using iCloud to sync your contacts will always prompt you with "Keep on my iPhone" or "Delete from my iPhone". Here's some information on iCloud contacts:

Second, probably the simplest solution, reach out and confirm if your Google account can be re-enabled. By signing into your Google account, it looks like you should be able to export your contacts in one large list.
