Thanks for reaching out to the Apple Support Community. Apple Music is great for discovering new music and having access to the artists you already love, and i'd be happy to help you look into it.
To address the first part of your question, when you cancel an Apple Music membership the songs you've added or downloaded are no longer accessible. If you choose to restart your Membership within 30 days they will return without having to re-add them.
In reference to listening offline, as you would in airplane mode, there are a couple settings to consider. If you have iCloud music library enabled you will need to download those songs manually for offline listening. If you do not have iCloud Music Library active then you can sync music to your device as normal and listen offline. When you activate iCloud Music Library it will move all of your music off of your device by default.
