Q: Why is Airdrop grayed out?
I've been trying to search for the reason my Airdrop stopped working on my Mac and no longer appears in Finder. I found this but don't understand why Airdrop is grayed out and why I can't click on it. Can you help me interpret this? Thanks.

AirDrop will not work for a number of reasons. Firstly i would ask you to do simple troubleshoots like of instance sign out of apple id and sign back in. Turn back your wifi and bluetooth on both of your devices. set AirDrop Allow me to be discovered : "Everyone" on both the device.
After doing all these and yet you have problem getting your AirDrop into working shape, click apple logo>About This Mac>System Report>WiFi there search for country code. If you see X2 or X0 AirDrop will not work. Then you will have check your wifi and change the origin i.e my origin is in USA and my country code is US. And the screenshot you added if just normal because apple will not allow third party extension to mess around AirDrop.
