I believe that iBooks is a like a "library reading room" in that it is a place to go to browse fro and read 'books' - not a place to "edit" the books or the "catalog" of titles
The search result summaries seem to indicate that you might get joy with using iTunes to change the properties of the PDF - but I'll let you dig into the details, snce you will need to perform the actions

Aug 19, 2016 2:23 PM in response to Tinya284by Homer's Mom,Apple used to let us rename our PDFs, but a few IOS "upgrades" ago, they stopped allowing it. There was a lot of complaining about it in this forum then, yet nothing has been done to fix it. When I need a new title for a PDF, I now mail it to my Windows PC and rename it there. Then, if I absolutely have to have it back on my Ipad, I remail it back to myself and open it with its new name. It's a huge hassle.
