As far as this part of your question, you can't really "know" other than the reputation of the VPN provider. Which is generally true of any company you deal with online. Any number of companies have been hacked despite trying to provide security and personal information has been compromised. Certainty is not possible.

At home, generally your WiFi is secure, assuming you use a good WiFi password and you use WPA2 WiFi security.
On the road, using someone else's free WiFi, or even hotel paid WiFi, a VPN means total strangers sharing the free WiFi or hotel WiFi will not be able to see your traffic.
A VPN can also be useful if you wish to make it appear you are located in another country.
And if you work for a corporation, you may need to use a VPN to access your company's network from your home.
And if you wish to connect back to your home from on the road, a VPN can be useful there, HOWEVER, Apple's Back-to-My-Mac (System Preferences -> iCloud -> Back to My Mac) is for all intents and purpose a VPN back to a specific Mac you own and have signed into the same iCloud Apple ID. It is not a general purpose VPN, but it is secure and very effective for accessing your home Mac from a remote location.
