Which version of GarageBand do you have?

In GarageBand 10 you can show the TrackLock from the Track menu:

Track > Track Header > Show Track Lock.

Also check, if Automation Curves have been added to your tracks. You cannot change the volume or the track pan using the controls in the track header, if an automation has been added. Then you have to change it in the automation curve.

    My version is 10.1.2

Actually, when I try to change the automation curve, as soon as the first note starts, it comes back to the preset. I checked and the track is not locked... Is it a bug??

    . Is it a bug??

I have not seen any similar reports.

What kind of instrument is it you are using?

Have you tried to create a new track and to copy and pate the midi to the new track?  Can you edit it then? YOu will need to enable "Mix > Move automation with regions", if you want to save the automation when copying the midi regions.

You can also try to change the volume in the midi draw area in the track editor for the midi track. Open the Track Editor, then the midi draw panel and select the controller fro the volume:

I am able to change the volume in the editing track!! That is obviously the only way in that case. Thank you VERY MUCH for your help. The little pictures were really helpful.
