Q: Changing SIM card to new carrier. Will I lose all my contacts, apps, etc?

IF I get a unlock authorization and restart with another carriers SIM card, will I lose all my data, contacts, apps, etc?  Or will all the information be retained by the iPhone 6?

iPhone 6, iOS 9.3.4

No. The sim card only holds your number, and carrier information.

 

It has nothing to do with your phone's data, contacts or Apps. Those will remain on the iPhone.
