It sounds like you want to make sure that the information about your photos stays with the photos when they are uploaded to iCloud. I will be happy to help you with this.
Information such as when the photo was taken, what it was taken with, along with additional information is contained within what is called metadata. You can access this data by clicking on the photo and then pressing Command-I. You can also edit this information:
iPhoto: View and add information about photos
Even though the article talks about iPhoto, it works the same in Photos.
The date you see in the file view is the date the photo was copied. In other words, if you move a file today, it will have today's date associated with it in the file view. If you would like to retain the original date, then from within Photos, click on the photo, then click on File > Export > Export Unmodified Original For (filename). Then choose where to export it to in the window that opens.
