I've yet to find one that allows functionality on the screen.

You may wish to consider using a thin film type screen protector, which may provide some measure of protection against damage.

Be aware that some screen protectors cover only the flat part of the display, whereas some thin film-type protectors (such as the Zagg Invisible Shield HD) cover the full screen of Apple Watch, including around the curved edges of the glass.
Commonly reported problems with some plastic snap-on type shields / protectors (in general) include that they may, for example: fall off relatively easily, reduce touch sensitivity, become dirty, scratch quite easily, trap moisture and/or trap small items of debris (which can then cause scratches on the watch case and/or display).
Using a plastic case may also make it harder and/or less convenient to keep your watch clean and dry. Cleaning and drying your watch is recommended, for example, after exposure to sweat and other liquids in order to maximise comfort and prevent long-term damage to the watch.

So easy to apply, can be used with or without a case and super easy to take off if you feel like changing it. The packs usually come with 6 screen protectors and the wet applicator.. but to be honest you don't even need to use the applicator spray if you don't want to.
