Once a warranty expires, you cannot add it back or extend it.  Any warranty extension by Apple, for any of their products must be done while the device is still covered by the base one year warranty.  With an iPhone or iPad, if available in your country, AppleCare+ can be added within 60 days of original retail purchase.  Any extension of Apple's one year base warranty is a one time only purchase.
