Q: How do I use the activity monitor?
Can I use the activity monitor to compare active processes to a list of processes that are supposed to be there vs. not and if so, can someone point me in the direction where the default processes can be found for comparison?

Are you having some problem or are you curious? I think etrecheck will be a better bet. You could boot your mac in safe mode to see what is typical. There are a lot of processes. I google the internet with the process name. will be a little tedious for all 185 or so that etrecheck leaves out.
You can run etrecheck, by default it leaves out the common apple processes.
Download etrecheck. Click on the download link at the bottom of the screen.
