Q: How much data does Maps store on the iPhone?

Is it possible to navigate a longer route on the iPhone without having a cellular data connection? If so how much is stored. It would great to plan a day's driving while using a WiFi connection and then store that on the phone.

iPhone 6, iOS 9.0.1

Your iPhone uses GPS, not cellular data, to perform the navigation.  At the moment, my maps did not store enough data to actually show up when I do Settings > General > Storage & iCloud Usage > Manage Storage.

Update: Carolyn probably thought of something I overlooked. She is usually spot on.

While you cannot do this with the native iOS Maps app, you can with third party maps. Google maps does allow you to cache some limited map area for offline use and their are some free and numerous paid apps in the App Store that can cache internet map data or include offline maps in their download.
