None of those three. If you bump your budget up a couple of hundred dollars, you'd be looking at a far more capable machine. One that has a 27" screen with 5k resolution and a real graphics capability.

Where did yo get this information?

"All Mac Mini's up until 2015 have quad core i7s, after that they go to dual core."?

The 2012 Mac Mini had an option for a quad-core i7.

The next and latest Mini is still the 2014 Mini and all those are dual-core, either i5 or i7.

I support a 21.11 2.7GHz. i5 8GB RAM iMac 512MB Nvidia 640M that was purchased for design work. The system was demoted because was not up to the design needs of the Graphics art department. I would hate to see how this thing works with a 4k display because the 640M would not be able to do it with the CPU actually needing to be used

the Intel 6200 is a better card but it's still stuck sharing RAM from what the system will give it, and it's all DDR3 which for video editing could prove to be a bottleneck. Apple was once the go-to system for video editing, graphics and music, they do not seem particularly concerned with continuing that tradition on lower end systems.
