If you migrate an Aperture Library to Photos, the books will be converted to albums and you have to start over.
The problem is, that the Photos books do not allow the custom layouts from Aperture, so Photos cannot recreate the Aperture books. All you can do is export the art of the Aperture library with the book project as a new Aperture library, then migrate the partial library to Photos and try to recreate the book from the album, which will not be perfect.
Another option would be to create a PDF from your Aperture book and send this PDF file to Presto Photos for printing:

If you want the Aperture book to be printed by Apple, print your book to PDF and export the PDF file as separate JPEGS. Then create a book in Photos from the saved JPEGS. This will work for Extra-Large Hardcover books.
An Aperture Extra-large Hardcover Book ( 13 x 10 in., 33 x 25 cm) has the same size as a large Photos Classic Hardcover book.
