Q: How do I find mail sent to me  today ?

Look at the inbox of your email account. Have you set up your email account on the iPad?

Your question is a bit vague. On your iPad, in the Mail app, email is sorted by date. The most recently received email should be at the top of the list. Is that not what you're seeing? Please give some more details about what your issue is.
