I just got the 6S Plus and chose an old back-up date from previous phone. How do I re-do now that my phone is done with the set-up?

    I'm not sure what you mean by redo. If you want to restore from a newer backup, you can do so, providing that you have a newer backup.

    Restore your iPhone, iPad, or iPod touch from a backup - Apple Support

     

    If you have an iCloud backup that you want to restore, you must first erase the device in Settings>General>Reset>Erase all Content and Settings. After the device starts up again, you will be back to the activation screen and will be able to restore that backup when you get to that point in the set up process.

     

    If you backup with iTunes and want to restore a backup from there, you will have the opportunity to select any backups that you have when you select restore from backup.
