The default setting is for both devices to ring upon receiving an incoming call.
If you have chosen different alert settings for your iPhone and/or watch, there is not presently any way for that setting to automatically change when the watch becomes disconnected (rather than unpaired, which is different and not what you meant).
If you would like to suggest that to Apple as a new feature, you can do so here:

Too bad, I believe this would be a nice feature and not hard for Apple to implement. Much like being able to "ring" your phone to find it even though the ringer is off or on vibrate.

You may find the following existing feature helpful.
To ping your iPhone from your watch:
- When viewing the time on the watch face, swipe up to open Glances > swipe left / right to the Settings glance > tap on the ping iPhone button:
- Your iPhone will emit a tone to help you find it.
